Travel = discovery. We may learn a truth about ourselves, others or how the world works. Or we may find the world’s greatest cheese dip in the state where it was created.

Cheese dip was created at Mexico Chiquito in North Little Rock in the 1930s. Its popularity in the state grew and the World Cheese Dip Championships are held in Little Rock every year.

I devoured one of the champion cheese dips at Dizzy’s Gypsy Bistro where the secret recipe involves several steps with more than 25 ingredients including roasted peppers, bechamel sauce, spices, homemade salsa and pico de gallo.
